Ingredients
- 100g pitted soft dates
- 75g finely grated carrot
- 70g oat flour (ground up oats)
- 60g pecans, cashews, walnuts or a mixture
- 20g desiccated coconut
- 20g hemp hearts
- Juice and zest from half a lemon
- large pinch of Cinnamon and Ginger
- Small pinch of nutmeg
- 1 tsp vanilla essence
- pinch of sea salt
Garnish (optional)
- Dark chocolate to drizzle over or dip to coat whole truffle
Method:
- Blend all the ingredients in a mixer/food processor until really well mixed.
- Add the seasoning gradually to suit your own preference.
- Roll the mixture into small bite-sized balls, you could weigh these to get all exactly the same size
- If desired, roll each ball in chocolate or you can drizzle for less calories but still get the sweetness.
- Place in the fridge to chill and firm up.
- Store in an airtight container in the fridge or freezer.
*Tip* Freeze, ideal for hiking, cycling, running – can be eaten from frozen too!
