Ingredients

  • 100g pitted soft dates
  • 75g finely grated carrot
  • 70g oat flour (ground up oats)
  • 60g pecans, cashews, walnuts or a mixture
  • 20g desiccated coconut
  • 20g hemp hearts
  • Juice and zest from half a lemon
  • large pinch of Cinnamon and Ginger
  • Small pinch of nutmeg
  • 1 tsp vanilla essence
  • pinch of sea salt

Garnish (optional)

  • Dark chocolate to drizzle over or dip to coat whole truffle

Method:

  1. Blend all the ingredients in a mixer/food processor until really well mixed.
  2. Add the seasoning gradually to suit your own preference.
  3. Roll the mixture into small bite-sized balls, you could weigh these to get all exactly the same size
  4. If desired, roll each ball in chocolate or you can drizzle for less calories but still get the sweetness.
  5. Place in the fridge to chill and firm up.
  6. Store in an airtight container in the fridge or freezer.

*Tip*  Freeze, ideal for hiking, cycling, running – can be eaten from frozen too!
