Ingredients

  • 1 Large sweet potato, (baked)
  • 1 Tbsp Honey
  • 2 Tbsp Cocoa powder
  • 1 Tbsp Hemp Protein (50%)
  • Milk (what ever you have in)
  • 1 Tsp Vanilla Essence (if you have it)

Garnish (optional)

  • Raspberries / Strawberries sliced
  • Toasted flaked almonds

Instructions

  1. Bake sweet potato until really soft, spoon out the potato into a jug if using a stick blender or food processor for large portion
  2. Add the cocoa, protein powder, vanilla essence, honey and add some milk, (I use Barista Oat) start to blend, adding more milk until you achieve the right consistency for chocolate mousse.
  3.  spoon into your chosen serving dishes and place in fridge to chill, if you want to batch make for the week then double up quantities and cover with cling film then add toppings just prior to eating.
  4. ENJOY a sin free desert
